Recipes Along the Grand Strand: Chocolate Delight


To continue our recipe series, I thought I might post one that is always a crowd pleaser: Chocolate Delight. This extremely easy dessert is quick, simple and not too sweet, and is perfect for parties, tailgating, potluck dinners, and office get-togethers (it always disappears fast when I bring it for our office Thanksgiving). Enjoy!

Chocolate Delight Recipe

Crust: 1 cup plain flour
1 stick of butter
½ cup chopped pecans

layer: 8oz. cream cheese
1 cup powdered sugar
1 regular sized tub of Cool Whip

Chocolate
Layer: 1 large package of instant chocolate pudding*

In the oven, melt 1 stick of butter in an 8”x11” pan, add nuts, and mix in flour with a fork, and then press into a crust that covers the entire bottom of pan (it will be a thin crust).
Bake 15 minutes at 300 degrees.

Mix together the cream cheese, powdered sugar and ½ tub of Cool Whip (this works a lot better if you use a mixer). When crust is cool spread evenly over crust.

Follow the directions on the instant pudding and when the pudding is firm, spread on top of cream cheese layer.

Refrigerate until firm. Spread remaining Cool Whip on top and sprinkle with chopped pecans** Keep refrigerated. Cut into squares to serve.

*Butterscotch or any other kind of pudding can be substituted for chocolate.
** You can substitute the pecans for any topping of your choice. Some good flavors are crushed peppermints, toffee chips, butterscotch chips, or caramel drizzle. Get creative!
